Equipment

  • food processor or blender

ingredients
  

Roasted tomatoes

  • 400 g cherry tomatoes
  • 1 pinch salt
  • 1 tbsp olive oil

Pistachio Pesto

  • 30 g pistachios
  • 30 g Parmesan
  • 15 g basil
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1 pinch salt
  • 2 burrata

instructions
 

  • Preheat the oven on 200 °C.
  • Add the cherry tomatoes to a baking tray with olive oil and salt. Mix it well, all tomatoes need to be covered with olive oil. Bake till soft.
  • In a blender or food processor, blend the ingredients for the pistachio pesto. Tast it and add more ingredients if needed.
  • Lastly, place the burrata on a plate, add the cherry tomatoes and drizzle the pesto on top.
