Lemon Raspberry Cake Overnight Oats

- 80 g oatmeal
- 2 tbsp protein powder
- 1 hand raspberries
- 20 g chia seeds
- 200 g milk (the amount depends on your own preference. Less milk, more pudding-like texture)
- 80 g yoghurt (vegan yoghurt optional)
- ½ lemon (juiced)
- 1 tsp vanilla
- ½ tsp lemon zest
Weigh the oatmeal and put it in a bowl.
Add protein powder and chia seed. Mix everything well together.
Add the lemon juice and vanilla extract and pour in the milk and yoghurt. Mix everything well.
Add the raspberries and lemon zest and spoon through.
Let it rest in the fridge for at least 2 hours or an evening.
