Creamy Cauliflower Pasta
A creamy pasta made of cauliflower! Topped with mushroom and Parmesan.

Sauce
- 1 small cauliflower
- 125 ml (oat)milk
- 100 ml pasta water
- 80 g cashew nuts
- 1-2 cloves garlic
- 1 tbsp lemon juice
- 10 g nutritional yeast
- 1 tsp salt
- 2 tsp black pepper
- 2 tsp onion powder
- 2 tsp parsley
Pasta
- 150 g spaghetti
- 200 g champignons
- 1 tsp Parmesan
Cook the pasta and cauliflower in boiling water for 10 minutes. Soak the cashew nuts in water.
In the meantime, cut and fry the mushrooms.
Blend the ingredients for the sauce in a blender.
Add the sauce to the pasta. Stir it and add the mushrooms.
Add Parmesan on top.
