Caprese Waffle

- Waffle Maker or Toaster
ingredients
Waffle Batter
- 2 egg
- 100 ml milk
- 125 g greek (soy) yoghurt
- 1 tbsp agave syrup
- 1 tsp vanilla extract
- 1½ tbsp margarine (melted)
- 150 g oat flour
- 2 tsp baking powder
- ½ tsp salt
Filling
- 1 tomato (cut into slices)
- 75 g mozzarella (cut into slices)
- 4 tsp basil pesto
instructions
- Mix all the ingredients together.
- Cut the tomato and mozzarella in slices.
- Heat up the waffle iron and add 1 tbsp of the waffle batter. Place a slice of mozzarella, tomato and a tsp pesto in the center and add ½ tbsp of the batter on top to close the waffle.
- Bake the waffles for around 5 minutes.
