Caprese Waffle

A waffle recipe filled with mozzarella, tomato and basil pesto!

  • Waffle Maker or Toaster


Waffle Batter

  • 2 egg
  • 100 ml milk
  • 125 g greek (soy) yoghurt
  • 1 tbsp agave syrup
  • 1 tsp vanilla extract
  • tbsp margarine (melted)
  • 150 g oat flour
  • 2 tsp baking powder
  • ½ tsp salt


  • 1 tomato (cut into slices)
  • 75 g mozzarella (cut into slices)
  • 4 tsp basil pesto


  • Mix all the ingredients together.
  • Cut the tomato and mozzarella in slices.
  • Heat up the waffle iron and add 1 tbsp of the waffle batter. Place a slice of mozzarella, tomato and a tsp pesto in the center and add ½ tbsp of the batter on top to close the waffle.
  • Bake the waffles for around 5 minutes.


Vegan: not possible
Seasoning: add a little bit of salt to the mixture.
