Creamy Feta Salmon Pasta
To a baking dish, add olive oil, 150 g feta, cherry tomatoes, salmon, shallot (cut is small pieces), garlic cloves (wrapped in foil), salt & pepper. Bake uncovered for 45 minutes or till the tomatoes are soft on 175°C.
In the meantime, cook the spaghetti al dente in the meantime.
In a bowl, crumble the lemon zest & leftover feta together.
When the oven dish is ready, mash the tomatoes, salmon, feta, and garlic. Mix it well. Stir in the basil, peas and spaghetti.
Top the pasta with extra salmon if preferred, basil and the lemon feta mix.
