Crispy Stuffed Olives
Olives stuffed with a mixtures of minced meat, dried tomatoes and Parmesan and covered with a crispy breadcrumb layer! A combination you definitely have to try!

Fry the shallot, garlic and minced meat in a frying pan.
Transfer it into a food processor or blender and blend for 2 minutes. Add the sundried tomatoes, lemon zest and blend till smooth.
Add the bread crumbs, Parmesan and egg and knead into a ball.
Cut the olives ⅔ in half. Make a little ball out of the minced meat and place it in the olives. Close it.
In a bowl, beat the egg. And place the flour, and bread crumbs in 2 other bowls. Dip the olive in the flour, afterwards in the egg, and lastly in the flour.
Place the olives in the air fryer for 15-20 minutes, till golden brown.
Vegan: use vegan minced meat, and leave out the egg and Parmesan. Dip the olives in the flour, olive oil and bread crumbs.
