Roasted Tomato Mozzarella Avocado Toast

An easy avocado toast recipe with roasted tomato, mozzarella and truffle oil.

  • 4 slices (wholewheat) bread
  • 1 cloves garlic
  • 1 avocado
  • 100 g mozzarella
  • 200 g cherry tomatoes
  • 2 tsp truffle oil
  • 3 basil leaves


  • Preheat the oven on 200 °C. Place the cherry tomatoes in the oven with a little bit of oil for ca. 20 minutes.
  • Toast the bread as preferred. Brush it with the garlic clove on one side.
  • Cut the avocado in slices and place it on the bread. Top it with the mozzarella and roasted tomatoes. Drizzle truffle oil on top and sprinkle it with basil.
