Savoury Muffins

A lovely savoury baking with lots of vegetables and fiber.
They are perfect for a brunch or to serve when you have guests!

  • Oven


  • 150 g oat flour
  • 30 g buckwheat flour
  • 50 g spelt flour
  • 1 tsp baking powder
  • 1 handful spinach (optional)
  • 100 g zucchini (shredded)
  • 12 cherry tomatoes (1 on each muffin)
  • 50 g oil
  • 50 g grated cheese
  • 175 ml milk
  • 1 egg


  • Preheat the oven to 180 degrees.
  • Grate the zucchini, cut the spinach into small pieces and the cherry tomatoes in half.
  • Beat the milk, egg and oil in a bowl and pour this liquid mixture.
  • Add the other ingredients (add the seasoning) ½except the cherry tomatoes. Beat well to mix everything.
  • Put the mixture in the muffin cases, add a cherry tomato to each muffin and bake for 30 minutes.


Vegan: not possible. 
Seasoning: 1 tsp salt, 1/2 tsp pepper, 1 tsp paprika powder, 1/2 tsp basil and 1 tsp onion powder.
