Shrimp Cucumber Boats

An easy lunch or dinner recipe which you can make in 15 minutes!

They are filled cucumbers topped with avocado, shrimps, Mayo amd sriracha!

  • Frying pan
  • Cooking pan
  • 1 cucumber
  • 50 g (sushi) rice
  • 100 g shrimps
  • 1 clove garlic
  • 1 tsp soy sauce
  • 1 pinch chili flakes
  • 1 tsp sesame seeds
  • 1 avocado

Toppings:

  • 1 tsp mayonaise
  • 1 tsp sriracha
  • 1 spring onion
  1. Cook the rice.

  2. In the meantime, fry the shrimps together with the garlic, soy sauce and chili flakes.

  3. Empty the inside of the cucumber and fill it with rice. 

  4. Add the sesame seeds, avocado, shrimps and toppings.

Vegan: leave out the shrimp and use vegan mayonaise.
