Shrimp Cucumber Boats

An easy lunch or dinner recipe which you can make in 15 minutes!
They are filled cucumbers topped with avocado, shrimps, Mayo amd sriracha!

Equipment

  • Frying pan
  • Cooking pan

ingredients
  

  • 1 cucumber
  • 50 g (sushi) rice
  • 100 g shrimps
  • 1 clove garlic
  • 1 tsp soy sauce
  • 1 pinch chili flakes
  • 1 tsp sesame seeds
  • 1 avocado

Toppings:

  • 1 tsp mayonaise
  • 1 tsp sriracha
  • 1 spring onion

instructions
 

  • Cook the rice.
  • In the meantime, fry the shrimps together with the garlic, soy sauce and chili flakes.
  • Empty the inside of the cucumber and fill it with rice. 
  • Add the sesame seeds, avocado, shrimps and toppings.

notes

Vegan: leave out the shrimp and use vegan mayonaise.
