Cut the pumpkin (if it is too hard, put it in the oven for a few minutes). Put the pieces in the oven for 20 minutes till soft or boil till fork tender. Drain it and let it fully cool down.
Add the pumpkin to a clean dish towel and squeeze out all excess water and oil.
Add pumpkin with water removed to a large food processor. Blend it into a crumble. Add the (cassava) flour and sea salt as well. Process until a dough ball forms.
Add the dough ball to a clean & floured surface and knead until solid. Cut the dough ball into 4 equal parts. Roll each part into a skinny roll. Cut each roll into 1½ cm gnocchi pieces.
Add the gnocchi to boiling water and boil till they start floating. This should take around 2 minutes.
Add the gnocchi to a frying pan and fry till golden brown. Add your favourite sauce (I used pesto).
