Finely chop the shallot and garlic. Heat up olive oil in a pan and fry it.
Add the whole cherry tomatoes together with the Italian herbs, paprika powder, salt, and pepper. Fry it till the tomatoes turn soft.
Meanwhile cook the pasta.
Onces the tomatoes have turned soft, flatten them with a wooden spoon.
Add the tomato puree, cream, pasta water (red wine) and Parmesan, mix everything well and add the basil.
When the pasta is ready, add it to the sauce and stir it. Serve the pasta with burrata and chilli flakes.
