Strawberry Rhubarb Pie

Somehow late night baking is so relaxing. Until it’s 1AM and your pie is still in the oven and you want to go to bed 😂 that was me with this video, but it was worth it! I loveee the combination of strawberry and rhubarb 🫶🏼

  • Oven


  • 40 g apple sauce
  • 85 g margarine
  • 80 g maple syrup (or agave syrup)
  • 2 tsp vanilla extract
  • 1 egg
  • 200 g all purpose flour
  • 100 g oat flour
  • 1 tsp baking powder
  • 1 pinch salt

Rhubarb & strawberry

  • 300 g sliced rhubarb
  • 380 g chopped strawberries
  • 3 tbsp agave syrup
  • 15 ml orange juice
  • 7 g vanilla sugar
  • ½ tsp vanilla extract
  • 30 g cornstarch


  • Preheat the oven on 175C.
  • Cut the strawberries and rhubarb in small pieces. Place them in a bowl and add the agave syrup, orange juice, vanilla sugar, vanilla extract, and cornstarch. 
  • Mix the apple sauce, margarine, maple syrup, vanilla extract and egg till smooth. Add the flour, oat flour, baking powder and salt. 
  • Take 2/3 of the dough and cover the bottom and sides of a 18 cm baking tin with it. Place the strawberry mixture in it and braid the rest of the dough on top. 
  • Bake for ca. 45 minutes.
  • Let it rest for 15 minutes, and enjoy!
